Authentic Lemon Rice – Andhra Style | South Indian Fried Rice Recipe | Summer Special


Summers in India are about Summer vacations. Summer vacations are a time when people travel to their native land for summer holidays through train journeys. The speciality about train journeys are the food. Lemon Rice is always the hot favourite during train journeys. Lemon is good for the summer and this lemon rice sustains for longer days.



Ingredients

·        Lemon Rice ingredients

·        Par boiled Rice - 3 cups

·        Chana Dal - 5 tbsp

·        Urad Dal – 5 tbsp

·        Asafoetida – ½ tsp

·        Cumin & Mustard – 2 tsp

·        Turmeric – 1 tsp

·        Lemon – 1 1/2

·        Dry Red Chilli - 4

·        Few Coriander Leaves

·        Green chillies - 5

·        Few Curry leaves

·        Oil – 7 tbsp

·        Cashew - 6

·        Peanuts – 1 cup

·        Salt as per taste

Method

1.      Heat a pan and add cooking oil.

2.      Add all the ingredients in the oil except oil and lemon.

3.      Fry everything for few minutes.

4.      Turn off the flame. Add rice and mix well.

5.      Squeeze lemon juice and mix well.

6.      Lemon Rice is ready to be served.

Barik Methi Sabzi – Maharashtra’s Secret Recipe | Indian Baby Fenugreek Stir Fry


Maharashtrian cuisine is extremely diverse yet underrated. Today we share with you the hidden recipe of Barik Methi Sabzi (Baby Fenugreek Stir Fry) which is also very uncommon in Maharashtrian households.


Ingredients:

·       8-10 bunch Baby Fenugreek

·       ½  cup Grated Coconut

·       2 Onions finely chopped

·       3-4 Green Chillies finely cho  pped

·       3 tbsp Oil

·       Salt as per taste

Method:

1.  Chop off the lower portion of the Methi leaves bunch and wash it thoroughly in water to remove any dirt.

2.  Heat oil in a pan and add onions and green chillies and cook till onions become soft (translucent).

3.  Add Methi leaves and salt and cook for 5-7 mins.

4.  Now add coconut, stir well and switch off the flame.

5.  Barik Methi Sabzi is ready to be served with Roti/ Chapathi/ Phulkas.
